Designed as a tribute to small local producers, our seasonal menu seeks to capture the essence of this time of year with local ingredients, careful techniques and a presentation that pays tribute to the land that surrounds us.
A tour of the Matarraña region through the palate
From the tomatoes of Híjar to the oak honey of the Maestrazgo region, from the rancio wine of Horta to the truffled sheep’s cheese of Hontanares, each dish is a dialogue with the environment. Our kitchen team has built this menu with the product as the protagonist, highlighting its natural properties and combining them in a creative, but always respectful, way.
Whether you choose to start with a vegetable ceviche, savour meats from the ancient Kingdom of Aragon, enjoy a rice dish with a Mediterranean accent or close with desserts reinvented with local products, the Summer 2025 Menu is designed to surprise, excite and reconnect with the origin.
